In back reach in cooler for raw meats and veggies, observed a large container of raw cucumbers stored directly below prepared skewers of raw beef. All raw vegetables should be stored above raw meats. PIC had employees move them to proper storage.

Observed lettuce temped at 46*F in cold holding unit for salad preparation. PIC stated that lettuce had been in cold holding unit since open. Observed tzatziki sauce individually packaged, prepped in house the day prior, temped at 49*F. Tzatziki sauce contains yogurt, sour cream, cucumber, and spices per PIC. All TCS foods improperly cold held were discarded by PIC at time of inspection. All TCS foods improperly cold held within 4 hours of being placed in cold-holding unit were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
