Inspector's notes

Observed two cambros filled with portioned cooked chicken wings (45-48'F) stored inside a small single-door floor refrigerator adjacent to the fryer station. Per PIC they were placed within the unit within the past hour. Discussed proper cold-holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed small single-door floor refrigerator with an ambient internal temperature measured at 46'F via min/max thermometer at time of inspection. PIC moved all TCS food product stored within to alternative refrigeration (See Violation #22). PIC stated that they will discontinue use of the unit until repairs are made or a replacement refrigerator is provided. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.

Ran several cycles of mechanical warewashing unit and ran hot water valves for over 10 min at all hand sinks. Hot water unable to generate above 92*F. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food establishment. Person in charge stated a power surge happened within an hour of inspection and water heater will need time to regenerate power. Hot water able to generate at 127*F at mechanical warewashing unit and over 100*F at all hand sinks. 5-104.11 - Priority Foundation: System-Distribution, Delivery, and Retention Predefined Comment: Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Predefined Comment: Provide adequate hot water at all sink fixtures prior to re-inspection.

Repeat Violation Observed clean metal pans stacked stored on shelving with a build up of gray sticky residue on all shelving and on dishes. Dishes were placed "upside down" with the food contact surface in direct contact with soiled shelves. All food contact surfaces and areas where clean food contact surfaces are stored should be smooth to touch, non-absorbent, and visibly clean. Area director arrived onsite and began moving pans, dishes, and shelving to be cleaned. Dishes were placed in sink for warewashing. Cleaning schedule for all areas of establishment to be assigned.
