Observed accumulation of dust along vent covers of walk-in refrigeration units and accumulation of food debris along floor in syrup dispenser room. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. Individual wrapped breakfast sandwiches (including bacon/egg, ham/swiss, chicken) and omelets with internal temperatures between 52 degrees F and 56 degrees F were cold holding in the beverage walk-in cooler. Ambient temperature of the walk-in was found to be 52.8 degrees F by using a min/max thermometer. Spoke with PIC and they stated that a work order had been placed to repair the unit. The PIC stated that all TCS ingredients were moved to a different walk-in this morning except the sandwiches, which were over looked. Sandwiches were removed from the freezer this morning and placed into the walk-in cooler approximately two hours before inspectors arrival. PIC removed the breakfast sandwiches to another walk-in cooler to cool to 41 degrees F. All TCS cold holding items need to be held at a temperature of 41 degrees F or below.
