Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Corrective Action: Correct prior to re-inspection. Coolers 1 and 6 are holding TCS food 45-52*F. Unit thermometers read 48*F and 50*F and min/max readings were 45*F and 49*F at the time of inspection. Discussed using the units for non-TCS foods only or repairing to enable units to hold TCS food. Please contact the inspector for reinspection if the units are repaired to hold TCS food.
