TCS foods (cut tomatoes, cut lettuce, cut spinach) were moved to walk in cooler to rapidly cool back down to the proper cold holding temperature. Ambient air temperature of reach in cooler was 55*F, taken with inspector thermometer. Discontinue use of reach in cooler for storing of TCS foods until able to maintain proper cold holding temperatures at all times.
