Inspector's notes
Observed various ROP vacuum sealed RTE foods and sauces thawing in the food prep sink under a stream of hot water. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Also observed ROP seared tuna with a raw interior in packing stating "Keep Refrigerated." All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed an ambient air temp of 40*F in the end cap cooler in the deli islands. Observed TCS foods holding within the unit with internal temperatures ranging from 44-51*F, including RTE salmon, glazed salmon, grill chicken, pulled chicken, breaded chicken, chicken parmesan, grilled steak, and meatloaf. PIC stated all foods observed out of temperature had been in the cooler longer than 4 hours. Establishment has a remote monitoring system that had not alarmed. No ice buildup observed. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Discussed that if in defrost, cold holding equipment should not allow TCS foods within the unit to reach above 41*F. Corrective Action: Corrected at time of inspection.
