Walk-in cooler in bakery area had the following TCS foods measuring an internal temperature of 44-50'F: hard boiled eggs, feta cheese, beets, cooked chicken breast, leaf lettuce mix, roasted carrots, roasted, green beans, roasted potatoes, sweet potatoes, chicken parm, shredded beef, shredded cheese, breaded chicken, and meatballs. Per person in charge temperatures of food had not been verified since previous day. As it could not be determine how long food had been out of temperature it was embargoed. TCS foods shall be held at 41'F or lower when cold holding. Corrective Action: Corrected at time of inspection.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ---In smaller walk-in cooler in bakery area, a closed metal proofing box had the following TCS foods measuring an internal temperature of 53-72'F: cooked salmon, cooked chicken parmigiana, cooked carrots, cooked brussel sprouts, cooked sweet potatoes, and cooked green beans. Per person in charge box is used to cold hold foods and temperatures are to be taken of cooling foods to verify they have reached cold holding temperature before being placed into box. After speaking with person in charge of department, it was determined that pan of chicken parmigiana that had been cooked earlier in morning and was cooling had been placed into sealed box with cold holding items instead of larger walk-in cooler, heating up cold food being stored inside. Food had been out of temperature for less than 3 hours. Department employee removed chicken parmigiana from box to cool on open rack and moved remainder of box to larger walk-in cooler to cool to proper temperature. TCS foods shall be held at 41'F or lower when cold holding. Correct By: Corrected At Time Of Inspection
