All handwash sink hot water temperature reading are at 100F and all other sinks at 110F. A temporary 50-gallon water heater has been installed while the permanent 100-gallon water heater is waiting for approval from the FSD (Facilities Service Division). MCESD will be notified when permanent water heater will be installed.

Per PIC all rice was cooked day prior and put in walk to cool. Discussed with PIC that all TCS food items should be cooled from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours; a total of 6 hours from 135°F and 41°F or less.
