Observed containers of various cooked meats, pico de gallo salsa, other salsas containing cut tomatoes, refried beans, and raw marinated beef in walk-in refrigerator with internal temperature of 49-51 degrees Fahrenheit. Ambient temperature of walk-in refrigerator was measured at 51F with min-max thermometer. Person in charge (PIC) voluntarily discarded cooked al pastor pork, refried beans, and cooked beef tripe that were prepared the previous day. All other TCS items, per PIC, were prepared in the morning less than 4 hours prior to inspection. PIC moved these items to other walk-in refrigerator that was holding cold during the inspection.
