Sanitizer dispenser at 3-compartment sink dispensing quaternary solution at a strength above 400ppm. Unit should produce a strength of at 150-400ppm every time for proper sanitation. Inspector's notes

Quat sanitizer solution in wiping cloth buckets and inside the sanitizer compartment at the 3 compartment sink observed with a concentration above 500ppm. Chemical sanitizers may be toxic if not used in accordance to FDA food code requirement. There were dishes in the sanitizer solution and recently sanitized containers air drying. It was determined that the sanitizer dispenser was/is dispensing a higher than normal concentration of sanitizer solution. All sanitizer solutions were diluted to yield proper concentration between 200-400ppm. PIC stated that they will submit a work order for the dispenser and continue to dilute the solution, and test it to confirm proper concentration before use. Establishment had test strips accessible and readily available. Corrective Action: Corrected at time of inspection.

The employee was sweeping the floor then went to wash hands before preparing a sandwich. Notified the employee about the correct handwashing procedure and they rewashed their hands correctly. Discussed handwashing procedure with person in charge. The proper handwashing procedure is: rinse under warm running water, apply soap and lather for 15-20 seconds outside of water, and then rinse.
