Since the establishment will be adding new plumbing and possibly a floor drain, please submit for a minor remodel before all the changes are added in.

Observed employee handle an orange and lime with her bare hands then proceed to place the garnish in the customer's drink. RTE food that was contacted by bare hands was discarded by PIC at time of inspection. Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. Explained to PIC, that ROP fish should be kept frozen for sell or removed ROP upon completion of thawing to reduce the risk of bacteria growth.
