Dishwasher after handling dirty dishes, removed clean dishes from dish washer and place them on the rack. Items were returned to dish washer to be rewashed. Dish washers were trained about when to wash hands between different tasks. Corrective Action: Corrected at time of inspection.

Onsite visit to discuss permitting. Per person in charge variance approval for Reduced oxygen packaging should be moved to FD-09865 (catering) where it is utilized. Current permit is producing meals for places like hospitals, which include advanced prep like meatloaf and veggies or salmon and veggies. Discussed with person in charge upgrading permit from Class 2 processor to Class 4 processor. Provided PIC with code definitions for Classes and Fee schedule via email.
