Follow up advisory per regional office inspector's request. Discussed non-continuous cooking with manager. Honglei T. Manager stated the establishment does not use non-continuous cooking. Observed at beginning of morning shift raw chicken, beef, pork, fish fillet and shrimp were fully cooked in boiling oil and stir fried to above 189*F and then cooled to 41*F in walk-in refrigerator before moved to prep cooler. The above food items will be re-heated after costumer ordering. Discussed proper cooling step for above food items. Please always cooling the above food items in shallow metal container in walk-in refrigerator and do not put hot food in prep cooler directly.No County legal action will result from this inspection.Notified regional office inspector of this advising.Inspection report provided by email.
