In the front display cooler, observed tuna salad with an internal temperature of 50 degrees F and chicken salad with an internal temperature of 52 degreed F. Person in charge stated items have been in unit since Sunday. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

In-use food equipment that comes into contact with TCS foods must be washed, rinsed, and sanitized every 4 hours. Reviewed employee illness policy and storage of personal items. I emailed the new owner packet with this inspection report and the cleanup procedures for vomit and fecal accidents.
