Observed salsa fresca, cut lettuce, and cheese in make line cooler top measuring 46-51F. Ambient temperature of make line cooler top measuring 50F. PIC reported placing items in cooler less than 2 hours ago. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Two pans of salad mix, two pans of cabbage, salsa fresca, sour cream, pollack, shrimp, and mozzarella cheese blend-46-63F in the table top area of both make line units in the kitchen. PIC stated that all items had been in the units for about three hours and relocated to the walk in cooler. Keep TCS foods in cold holding at 41F or below. *Ambient temperature of the main make line unit was 59F. The PIC stated that a work order would be placed for the unit and made an ice bath to store food items in within the unit. The PIC stated that food temperatures would be taken to ensure the unit is maintaining food items at 41F or below. Establishment has sufficient refrigeration. The AC in the back area of the establishment was not working and is most likely contributing to the refrigerator unit struggling. Corrective Action: Corrected at time of inspection.
