Observed TCS items such as soup with cooked chicken cooling in deep, covered containers, but within time/temperature parameters. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Observed significant cracking in countertop by hand sink in main service area. All food and non-food contact surfaces must be smooth, non-absorbent, and easily cleanable so it does not have the potential to harbor food residue or debris. Observed the sprite soda nozzle to have a build up of brown syrup. Person in charge states they clean all the nozzles daily but will start to scrub them as well to knock off any build up. Discussed the importance of cleaning and scrubbing the nozzles frequently to prevent any build up. Corrective Action: Correct prior to next routine inspection.

Observed employees when washing hands to be scrubbing hands with soap for less than 5 seconds with total length of washing hands to be less than 10 seconds. Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with new single-use paper towel, and turn off handles with paper towel to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and re-contamination. Employees washed hands for full 20 seconds at time of inspection. Corrected At Time Of Inspection PRIORITY VIOLATION-2-301.14, P: When to Wash. Observed employee pick up sandwich that had fallen on the floor with gloved hands, throw away sandwich and gloves, and put on new gloves without washing hands. Also observed employee handling dirty dishes at three compartment sink with bare hands, put on gloves without washing hands, and then handle clean dishes to put away. Had all employees wash hands at time of inspection.
