Inspector's notes

Observed back refrigerator having an ambient temperature of 45°F measured with the min/max thermometer. All Time Temperature Control for Safety (TCS) foods (pork, alfredo sauce, and sausage.) which had been in the unit for less than 4 hours were moved to alternative refrigeration. PIC placed all TCS items in the walk in refrigerator at time of inspection and will cease use of the fridge to hold TCS items until the refrigerator can maintain temperatures below 41°F. Discussed cold holding requirements. Advised PIC to replace gaskets to fridge to potentially fix the issue. Corrective Action: Corrected at time of inspection.

Observed heavy buildup of dust above clean knifes and clean dishes. Also observed heavy buildup of grease behind main fry area. Discussed cleaning frequencies with staff. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Discussed physical contamination risks with PIC. Corrective Action: Correct prior to next routine inspection.

At time of inspection container was overflowing with water from the compressor and spilling into the bottom of the cold holding unit. PIC stated they knew the unit was broken but has yet to repair or replace the unit. PIC stated they will have maintenance out as soon as possible to repair the the drip pan.
