Observed refrigerated drawer unit to have ambient temperature measured to be 48-50*F holding Time/temperature Control for Safety (TCS) foods (cheeses) with internal temperatures measured to be 48-53*F. Per person in charge items were not stocked in unit this morning, so items have been in unit for more than 12 hours and temperature of unit was not checked this morning. Items were voluntarily removed to discard, see embargo. Person in charge has already ordered a replacement unit and has adequate alternate coolers to use until unit has been repaired/replaced. Do not use unit to hold TCS foods until it can hold 41*F or below. Correct By: Corrected At Time Of Inspection
