Reviewed requirement for vomit and fecal clean-up procedure and kit with PIC.

Inspector's notes

Observed the bar dish machine actively in use and outputting a chlorine concentration of 0 ppm. PIC primed machine and no change occurred. Instructed PIC to use the ware washing machine in the back of house for sanitizing bar dishes until the bar machine is outputting an approved concentration. PIC moved all food contact surfaces to the back of house ware washing machine to be properly sanitized at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

In the grab and go cooler, observed packaged hummus, packaged cheese, and packaged boiled eggs having internal temperatures of 48*F. Cooler had an ambient temperature of 47*F. Person in charge states these foods had been in the unit all day. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Employee states the eggs had been left out for at least 1 hour prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Raw shelled eggs improperly cold held were relocated to a refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
