#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS foods with internal temperatures ranging 48*F-56*F stored in the bottom drawers of the prep table furthest in the back left of the cook line. These improperly cold held TCS foods include various soft cheeses, sliced tomatoes, tuna salad, chicken salad, etc. (see embargo form). The ambient air temperature of the unit was 59.3*F, measured using min/max thermometer. PIC stated that the food products in the drawers of the unit were stored from prep the day prior to inspection. Informed PIC that the food product needs to be discarded. PIC discarded all improperly cold held TCS foods at time of inspection. Food embargoed. PIC agreed to not use the drawers to store TCS food product until the unit is able to hold the products at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
