Observed 3-comp sink actively in-use with the sanitizer solution measured at 500PPM quaternary ammonium at time of inspection. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Sanitizer was diluted by PIC to approved levels at time of inspection. Corrective Action: Corrected at time of inspection.

Observed quaternary sanitizer solution prepared at 3-compartment sink without testing solution with test strips. Sanitizer dispenser emitting sanitizer at a strength of above 500. Person in charge dumped solution and manually prepared solution to read between 200-400ppm.
