Inspector's notes

Observed establishment using mechanical dishwasher to sanitize food-contact surfaces using chlorine sanitizer. Observed chlorine concentration of 0 ppm in final rinse water. Chemical sanitizers must be used according to manufacturer specifications. Person in charge relocated all food-contact surfaces to three-compartment sink to be washed, rinsed, and sanitized at the time of inspection. Person in charge will ensure that use of mechanical dishwasher is suspended until repairs can be made. Corrective Action: Corrected at time of inspection.
