Establishment to maintain time as a control policy until unit can hold a surface temperature of 41*F or below.

Open top compartment of cold holding unit, right of 3 compartment sink, holding food less than half full in bins (pico de gallo, guacamole with diced tomatoes, shredded lettuce, shredded cheddar, etc) at an internal temperature ranging 42-44*F. All equipment holding cold temperature-controlled foods should hold foods at an internal temperature of 41*F or below. Person in charge stated they will place a work order and will continue to use time as a control for food items held in unit until unit is able to hold food at an internal temperature of 41*F or below. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Predefined Comment: All equipment must be maintained in good repair at all times.
