Observed commercially processed cheese sauce being reheating for hot holding at time of inspection. Person in charge stated the cheese started reheating at 8:45am, with the temperature checked at 11am being 117*F. Commercially processed TCS food items must be rapidly reheated to 135°F within 2 hours prior to hot holding. Discussed with PIC about heating up half a bag of cheese sauce and keep the other half in the fridge. All TCS foods improperly reheated were discarded by PIC.
