Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Predefined Comment: Employee properly washed hands at handwash sink at time of inspection. Predefined Comment: Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.

Observed tuna salad for sandwiches and tomatoes stored inside of the front cold case with a temperature of 46F. The PIC indicated that the products were placed in the unit 3 hours prior to inspection. All Time/Temperature Control for Safety foods must be kept at 41F at all times. The PIC moved all of the TCS food products into the walk-in to cool down to 41F. Correct By: Corrected At Time Of Inspection

Observed the front cooler with a temperature of 43.3F storing TCS food products. All cold holding equipment must properly hold TCS food products at 41F or below at all times. The PIC indicated that the unit was having issues holding cold enough during rush periods and that the unit is planning to be replaced, but there has not been an update in which it will be installed. The PIC moved all of the TCS food products into the cold holding table by the grill and in the walk-in for the time being until the main cold holding unit is replaced.
