Person in charge (PIC) states that the food was received by individual vendor to possible sell in their establishment. PIC was unable to provide invoices and documentation regarding the production and official vendor of the packaged cooked beans. Explained to PIC that without proper invoice and documentation the time/temperature control for safety (TCS) food would be placed on a temporary hold until all invoice and documentation can be provided by PIC. PIC states that they do not want to sell the product in their establishment and chose to voluntarily discard of the TCS foods at time of inspection. Correct By: Correct Prior To Reinspection
