Observed Male staff member eating from a batch of cookies intended for customer service and contacting gloved fingers on mouth. Employee transitioned to contacting equipment for placing cookies in storage. Employee was instructed to wash hands. Employee attempted to wash hands with gloves on. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed butter cream frosting sitting out to soften on counter at 67*f degrees. During previous visit a discussion was had with owner about real butter needing to be on time control if left out for extended period of time. Employee stated it is the bakery's procedure to take butter cream out by whole counter and bring it up to room temp before use and what is left to cool down in fridge over night. Employee stated container takes a couple days or more to go through a single container. Inspector recommended taking out what is needed for the shift and placing it on a time control policy. Documentation on how to make a time control policy was sent the previous inspection. Cream frosting was returned to fridge at time of inspection to cool properly. frosting was made todays date 5/22.
