Observed temperature control for safety food items (TCS) Improperly cold holding on the left cookline open top between 52-56*f degrees. Manager stated that items had been restocked throughout the shift and were out less than 4 hours. All TCS food items moved to the walk-in cooler at time of inspection. Observed TCS items such as shredded cheese, sliced cheese, egg mix, cooked sweet potatoes, ham, whole eggs, Improperly cold holding at 58-65*f degrees on the right side cookline open top. items had been in cooler since 9am. Manager voluntarily discarded all food items at time of inspection. All TCS food items must be maintained at or below 41*f degrees. Correct By: Corrected At Time Of Inspection
