Observed one speed rack with pepperoni pizzas in zone one, two, and three and another speed rack with cheese pizzas and pepperoni pizza in zone one with no timers started. Establishment uses time as a control to hold pizzas in the speed racks. Person in charge stated the pizzas were prepared and placed in the racks approximately 30 minutes prior to inspection and started the timers for both speed racks. Observed a direct connection from mop sink faucet to chemical dispenser. Faucet has approved AVB installed, which has been under pressure whenever water supply is on. PIC unable to remove the hose connecting to chemical dispenser. Chemical dispensers and other equipment are required to have a separate, dedicated water supply line. No shut-offs such as y-valves or devices (i.e. side-kicks), equipment, etc., are allowed be present on the downstream side of an AVB. Please ensure that the hose is removed from the mop sink faucet prior to re-inspection on 9/26/2024. Corrective Action: Correct prior to re-inspection.
