Observed the following food items cold holding at internal temperature of 47-50 deg F in reach in unit on the preparation line holding >41 deg F sliced tomatoes, lettuce, peperoni, salami, shredded, American provolone, pepperjack, chicken strips and rotisserie, cooked egg patties, bacon, roast beef and cold cut combo. Manager informed the food items had been holding in another reach in unit from the night prior that was holding at >41 deg F and discarded.

TCS food holding out of temperature was discarded or redirected to walk in. Manager called technician will re-inspect. Corrective Action: Correct prior to re-inspection.

Discussed proper hand washing with PIC. Hands must be washed after handling dirty dishes before handling cleaned and sanitized dishes. The employee washed hands for 20 seconds at the time of inspection before continuing to put away clean dishes. Corrective Action: Corrected at time of inspection.
