No County legal action will result from this inspection.-Discussed discontinue use of the hand held concrete mixer to shredded meat and to get a NSF approved hand held mixer.-Also discussed criteria for doing ROP (reduced oxygen packaging) without a variance. Per PIC, the establishment currently does ROP for various cooked meats. Explained to PIC, once the meat is removed from the freezer and it has to be opened within 48 hours.

Person in charge (PIC) separated the damaged cans. A designated area will be used to store damaged cans until removal from the establishment. Corrective Action: Corrected at time of inspection.
