Inspector's notes

Observed fried eggs cooked from raw hot holding in a tray in the make-line warmer, with internal temperatures of 123-128F, probe thermometer, verified by PIC. According to PIC, the eggs were cooked less than 10 minutes prior to inspection and will be used within 20-30 minutes or discarded. PIC will retrain employees to push the tray entirely into the warming unit. Discussed maintaining TCS foods at 135F or more. Maintaining cooked TCS foods at 135F or more during hot holding is required to prevent the growth of pathogens. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-3-501.14, P: Cooling. >>> Observed several tightly covered metal pans of sliced tomatoes stacked and cooling in the walk-in cooler, near to the door. Observed the tomatoes with an internal temperature of 49-52F, probe thermometer, verified by PIC. The cooling process started more than 4 hours prior to the inspection. PIC discarded the tomatoes, see embargo form. Discussed the cooling procedure and PIC will modify it as needed. Safe cooling requires removing heat from food quickly enough to prevent microbial growth. Excessive time for cooling of time/temperature control for safety foods has been consistently identified as one of the leading contributing factors to foodborne illness.
