Inspector's notes

Observed a collection of large mixing wand attachments for a commercial dough mixer stored on a drying rack in the warewashing area with an accumulation of opaque, uniform and circular organic material on the food contact surface. According to PIC, the drying rack where the mixing wand attachments were is used to store extra equipment, and they were unaware of the last time it was used. Discussed cleaning frequency with PIC. All food-contact surfaces must be cleaned to sight and touch. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Final construction inspection for a Class 4 Food Processor permit was conducted with manager Jesse P. by appointment. The establishment was closed and not operating at time of inspection. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Also, checks and money orders are accepted via US Mail. If you select payment via US Mail, for further instructions please refer to the printed invoice. No operating permit is valid, until the permit fee is received by the Department. Construction inspection for a Class 2 Food Processing permit was conducted with Jesse P. by appointment. The project was approximately 95% complete at time of inspection. The canning/bottling operations at the facility are currently under FDA jurisdiction and will not require inspections from the County at this time. The bakery and roasting area will remain under County jurisdiction. Please address the following items prior to the final construction inspection: 1) Provide backflow certificates for the backflow devices installed in the canning area and behind the ovens. 2) Remove the copper pipping located downstream of the RO backflow preventer. 3) Plumb the vent drains for the RP backflow preventers and ensure 1" minimum air gaps are provided above the floor sink. 4) Provide additional FRP behind the prep sink. 5) Ensure all sink fixtures are caulked with silicone to the walls. 6) Caulk-in all escutcheon plates and plumbing penetrations. 7) Provide a 3/8th inch minimum cove base to the floor/wall junctures of the hood. 8) Provide an Integrated Pest Management control and program for the garage roll-up doors. At the final construction inspection, ensure hot water measuring 120' F minimum is provided to the plumbing system and all refrigerators are on and measuring at 41' F or below. MCESD inspection report was delivered via email. No County legal action will result from this inspection.
