Inspector's notes

Observed boba tapioca balls being placed under time as a control that had not been held at temperature above 135*F. Per PIC the boba was made two hours prior and placed in the container where it was held at room temperature until time of inspection. Internal temperature of boba registered 72*F with an internal probe thermometer. Per PIC they had intended to reheat the boba to 165*F before placing under time as a control. Educated PIC that Time As a Control (TAC) begins when the food reaches hot holding (135*F) or cold holding (41*F) temperature and cannot be reheated or cooled once TAC has begun. PIC discarded boba at time of inspection. Corrected at time of inspection.

Observed a slicer with large amounts of dried built up food debris on the back, front, and sheath of the blade. Per PIC they was using the slicer to slice roast beef shortly before inspector arrived on site .Food debris from roast beef could be found on the swing arm of the slicer in addition to the dried food. Educated PIC that all food-contact surfaces must be cleaned to sight and touch All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrected at time of inspection.
