Observed beef coming off of rotating cooker, cook takes off and puts in hot holding unit. checked the temperature of beef which was at 127'F after cook said it was done cooking. Discussed the importance of proper cooking temperature with the cook of intact meat being at 145'F. Had cook put on flattop till it was at proper cooking temperature.
