Supported by main downstairs kitchen.Correct the following items prior to your routine inspection:1) Air curtains in the process of being installed/connected. Ensure air curtains are automatically turned on via a microswitch whenever sliding doors are open.2) Due to grease trap being above ground and the necessary air gap, 3-compartment sink can only be drained one basin at a time; provide signage for staff.3) Repair leak at water heater.4) Have dish machine fully connected to chemicals prior to use.5) Provide additional lighting in storage area.6) Finish all other trim and detail work, such as minor tile repairs, sealing gaps, sealing foam at drain line of grease trap, etc.No County legal action will result from this inspection.Report emailed.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Of note, discussed the grease interceptor. It is strongly recommended that the grease interceptor be placed in the ground.
