Observed multiple TCS items (e.g., diced tomatoes, salsa) cooling with lids on and covered with plastic wrap. Those items were within the appropriate temperature ranges for cooling, however, person in charge (PIC) was advised to uncover those items to allow quicker cooling. Inspector's notes

Observed middle low boy cooler on the cook line with an ambient temperature of 50*F. The cooler contained TCS items including sliced cheese, sliced tomatoes, chopped lettuce, and tuna salad. The person in charge stated that the cheese, tomatoes, and lettuce had been stocked 1 hour prior to inspection. The person in charge stated that the tuna had been in the cooler overnight. The tuna measured 52*F with inspector probe thermometer. The person in charge voluntarily discarded the tuna at time of inspection. Discussed with the person in charge that all coolers should be maintained at 41*F or below when cold holding TCS items. Corrective Action: Corrected at time of inspection.
