Y connections are not permitted and mop sink and chemical distribution is to be fed by separate water connection. Hose to chemical distribution was disconnected. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. Advised to stock at half level when top is remaining open for long periods of time. Observed some shredded lettuce and sliced tomatoes in bottom portion of sandwich cooler at 44*F. Cold hold of food to be 41*F or lower. Advised staff to use metal stem thermometer to verify cold hold temperatures
