Inspector's notes

Observed elbow pasta in deep, tightly covered containers in the walk in cooler at 50*F. As per the person in charge, staff had prepared the pasta at approximately 10:30 am and it was still cooling. At time of inspection pasta still had 1.5 hours to reach 41*F. Staff placed containers into an ice bath at cooled product to 41*F while on site. Temperature Control for Safety foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
