Repair physical facility prior to next routine inspection. 6-501.11 - Core: Repairing -Premises, Structures, Attachments, and Fixtures-Methods Addl Notes: Upper latch on walk-in refrigerator and freezer obstructs holder at top of door on unit, eliminating the self-closing function on the door. Door remains open on units unless latch is manually adjusted and closed. All equipment should be in good repair and operate in its intended function. Person in charge to place a work order. Large ball of ice buildup observed on lower portion of walk-in freezer unit. Plastic appears to be contained in the ice ball and is sticking out, perhaps used to try and cover a leak in the link or catch condensate during defrost cycles. Please clean this area and ensure the equipment is in good repair and properly adjusted. Corrective Action: Correct prior to next routine inspection.

-- In reach-in refrigerator, observed cheesecake, salsa, mocha coffee, vanilla coffee, and sweet cream with internal temperatures ranging from 75°F-77°F with probing thermometer. The ambient temperature of reach-in refrigerator measured at 81°F using min/max thermometer. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
