PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed 3 gallons of milk inside of the reach in refrigerator. Internal temperatures of the gallons of milk as measured using a probe thermometer were at 50°F. The milk had been in the unit from a couple of days prior, therefore the milk was embargoed. It was observed that the thermostat on the refrigerator unit was set at around 50°F. After adjusting the thermostat, the min-max thermometer was placed inside of the reach-in refrigerator and left to stabilize. The min-max temperature reading after adjusting the thermostat was at 41°F. Please ensure that TCS foods are cold holding at 41°F or below. Discussed placing a thermometer inside of the unit to get a quick reading of the refrigerator temperature. Correct By: Corrected At Time Of Inspection
