Observed ice cream scoops being stored in tepid water. Person in charge placed the ice cream scoops in the sink to be washed, rinsed and sanitized. Discussed with person in charge utilizing a small hot holding appliance such as a crock pot filled with water holding at a minimum of 135°F to store ice cream scoops if the intention is to store them in water for easier scooping and clean-up. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. Inspector's notes

Observed a plastic container of cooked, cubed chicken approximately 6-8 inches deep with the lid on that was cooling in the walk-in cooler. Per the person in charge, the food had begun cooling approximately 2 hours prior to the inspection. The internal temperature of the cooked chicken was at 67°F. Discussed with person in charge using wide, flat pans with the food at a depth of no more than 3-4 inches deep, uncovered to help facilitate cooling. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
