Observed organic matter on the inside of a couple of the bar gun beverage dispensers at the bar. Discussed with person in charge to clean the nozzles on a regular basis to prevent the buildup of organic matter inside of the nozzle. Person in charge took the nozzles in question off to be washed, rinsed and sanitized at time of inspection. All food-contact surfaces must be cleaned to sight and touch. Observed a pair of tongs on the cooking line that was sitting in a container of water nestled in-between the flat top griddle and a hot holding unit. The temperature of the water was 121°F. Discussed with person in charge that if utensils are stored in water, the water must be above 135°F. The person in charge placed the tongs in hot water that was above 135°F. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Observed roasted brussels sprouts in a prep unit cabinet with an internal temperature as measured using a probe thermometer of 65°F. Per the person in charge, the roasted brussels sprouts had just been prepped and cooked and had been in the unit for less than 1 hour. Person in charge moved the roasted brussels sprouts to the walk-in refrigerator to rapidly cool to 41° F. Discussed with person in charge that prep units are only designed to hold food at temperature and not to cool down food. Discussed with person in charge reviewing cold holding with staff. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. 2nd CONSECUTIVE VIOLATION. Observed container of cooked ground beef in a pan on the top of the prep unit across from the pizza ovens with an internal temperature as measured using a probe thermometer of 67° F. Per the person in charge, the ground beef had been cooked approximately one hour prior and had been put into the prep unit right after cooking. Person in charge had the cooked beef moved to the walk-in refrigerator to rapidly cool to 41° F. Discussed with person in charge that prep units are only designed to hold food at temperature and not to cool down food. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed significant accumulation of grease near and under the fryers. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4614/AMC-Toolbox---Hot-Holding. -- Observed containers of heavy cream, vodka sauce, and a jambalaya base heavy cream sauce in a hot holding unit near the stove with internal temperatures between 89°F-112°F. The person in charge (PIC) stated the items were hot holding in another unit and just placed in the unit near stove an hour prior to the inspection. Reviewed hot holding temperature requirements with the person in charge. At the time of inspection, the PIC had an employee reheat the items on stove to 165°F as well as turn on the hot holding unit. Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence -- Observed multiple live German cockroaches throughout the establishment: under the 3-compartment sink, near office, near the walk-in refrigerator, and by the back door. Ensure the establishment is free of pests by inspecting shipments of food, inspecting premises for evidence of pests, and eliminating harborage conditions. The person in charge shall have a certified pest applicator come to the establishment and perform pest control within 10 days and a reinspection will be conducted once completed.
