observed at the grill line reach-in cooler, pans of diced carnitas, and diced chicken, temperatures indicating 53-58 deg f . per manager steaks and chicken chopped at noon. discussed with manager strategies to ensure 41 deg f, is maintained. suggested to utilize the facility walk-in cooler top shelf. currently used for frozen French fries. placing shallow pans of cooked diced proteins in the walk-in cooler, as needed, remove some and place in the grill line reach-in cooler. also, strategies such as shallow metal pans for cooked chicken and beef reviewed. please ensure tcs food is kept at 41 deg f. manager removed pans of beef and chicken.
