Also discussed all equipment used under a permit shall be kept in the facility. 2) TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.

Observed in the hot box by the entrance of the kitchen to be holding hotel pans of cooked chicken and several pans of cilantro rice at internal temperature of 125*F to 130*F Discussed with PIC Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Per PIC the items were placed in the unit within an hour of the inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Observed a container of sliced cabbaged date marked as being made on 1/3/25 and sliced cherry tomato at 1/5/25. Discussed with person in charge (PIC) RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Also observed several TCS items date marked for 8 days, thawed items with old date marks and some items without any datemarking (cut melon in the front refrigerator and pre portioned salads). Discussed to remove old date marks as some containers have old ones that were never taken off as well as the updated correct ones. Corrective Action: Corrected at time of inspection.

Discussed with PIC to protect the indoors from pests by keeping doors closed. Corrective Action: Corrected at time of inspection. Observed cooked chicken, cooked steak, cooked sweet potatoes, and cooked beans in the prep table with temperatures between 56 to 71*F at time of inspection. Per PIC, all items were placed into the prep table less than 2 hours prior to inspection. Observed ambient temperature of the prep table at 61*F at time of inspection. PIC stated that they will not utilize the prep table until it is able to keep TCS food items at 41*F or below at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.
