Knife with food debris on the blade stored as clean on magnetic strip above the prep station. Observed sticky food residue on blade of the can opener. PIC placed the knife and can opener in the ware washing area. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed cooked chicken with an internal temperature of 117 degrees F sitting on the counter across from the fryers. PIC stated that the wings have been there for 30 mins. PIC stated that the wings are cooked until 165 degrees F and then held on the counter for one hour and then moved to the walk-in. Reviewed cooling procedures with the PIC. PIC moved the wings to the walk-in cooler to rapidly cool to 41 degrees F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. TCS foods must be cooled from 135 degrees F to 70 degrees F in 2 hours and then from 70 degrees to 41 degrees within 4 hours. Corrective Action: Corrected at time of inspection.

The drain line from the ice machine on top of the soda fountain has been connected to the waste drain line from the trough in front of the soda fountain. Provide a separate hub drain assembly on the drain pipe so the ice machine drain line does not connect directly to any waste pipes. Provide a minimum 1 in. air-gap between the end of the ice machine drain line and the hub assembly.2. The drain pipe for the food prep sink is leaking and draining onto the floor. Repair the food prep sink drain pipe so that it drains properly into the floor sink with a minimum 1 in. air-gap and so there are not leaks.3. Provide metal trim flashing to cover and seal the spaces between the walk-in refrigerator and the surrounding walls.4. Provide a minimum 1 in. air-gap between the end of the soda fountain drain pipe and the flood rim of the floor sink that it drains into.
