Core-3-501.13, C: Thawing Observed thawed, raw tuna in manufacturer reduced oxygen packaging (ROP) in sushi fridge on sushi prep table. Manufacturer ROP packaging stated to "Thaw out of packaging under refrigeration." Discussed with PIC that tuna needs to be completely removed from packaging prior to thawing under refrigeration to ensure adequate oxygen gets to entirety of product.
