Observed TCS (time temperature control for safety) food items with internal temperatures betweeen 43F - 67F in the reach in cooler. TCS food items included packaged meats, dairy, and cheeses. The person in charge discarded food items that had been in the reach in cooler for more than 4 hours and moved the remaining food items to alternate coolers.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed reach in cooler with minimum ambient temperature between 48F - 60F. Observed temperature control dial on the low end (2 out of 10 with 10 being the coldest setting). The peron in charge discontinured used of the cooler for storing TCS food items and changed the temperature dial to the coldest setting to monitor ambient temperature.
