Observed containers of raw tuna and raw salmon placed on top of containers of cooked crab meat at the sushi prep table. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. Discussed ways of organizing preparation table so that cross contamination can be prevented and fish can be stored cold. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed raw tuna, raw salmon, cooked shrimp, tofu, lettuce and various crab meats at 45-50*F in the poke bar service table. Per the operator, the ingredients were loaded into the table two hours prior. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed all items in the service table loaded two hours prior holding above 41*F. Observed a build-up of ice within the prep table. Discussed having the table serviced prior to loading it for self-service poke sales. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. **Re-inspection required** A re-inspection was scheduled for Thursday, 11/13/25. Please contact inspector with any updates.

Observed raw salmon and tuna thawing in reach-in cooler near walk-in. Fish was originally stored in ROP packaging but was sliced. Discussed fully removing fish from packaging in the future. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection.
