Observed the low temp mechanical dish machine with a concentration of 0 ppm chlorine on recently washed dishes in the machine. The dish machine was ran through another cycle and the chlorine concentration remained at 0 ppm, verified with inspector and person in charge's (PIC) test strips. There appeared to be air in the line which did not allow the chlorine to be dispensed. The bucket of chlorine sanitizer appeared to be full. The chlorine concentration remained at 0 ppm after priming. PIC will contact the repair company and will use the 3-compartment sink to sanitize dishes until the dish machine has a chlorine concentration of 50-100 ppm. Discussed having an employee test the chlorine in the dish machine, before it is used to sanitize dishes. Corrective Action: Corrected at time of inspection.

Observed main walk in unit at 52.6*F with inspector min/max thermometer. Checked repeatedly. Last ambient 1 hr later was 56.7*F. Notified Person In Charge (PIC). PIC verified ambient temperatures. Inside hanging thermometer was at 50*F. 10 gallons of sealed Milk, 2 large sealed packages of American Cheese packages; sealed butter all at 49.8*F. Per PIC the temperature log was completed at 6am. Time of inspection is after 11am. PIC directed employees to move all tcs foods and other foods out of main walk in unit into two door refrigerator and freezer units to cool foods to below 41*F within 1 hr. ====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. OC inspection for a Class 5 Assisted Living facility was conducted with management team by appointment. The establishment was open and operating at time of inspection. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Provide a studor vent for any odors. Install a hub drain for the prep sink and provide a 1" minimum air gap above the hub drain. Provide a 1" minimum air gap for the walk-in cooler condensate drain above the floor sink.
